Cheese Sandwiches. Maltese Cross
¼ pound good English cheese—grated.
3 eggs, boiled hard—use the yolks only.
1 table-spoonful melted butter.
Thin slices of buttered bread.
Pepper and salt.
Rub the yolks to a smooth paste with the butter, season, and work in the cheese. Spread the bread, and fold upon the mixture.
