Roper opens with a short survey of foods and their functions under the motto that the blood is the life, then gives practical recipes: green vegetables, legumes and meats, fish, cheese and eggs, soups, noodles and dumplings, breads, cakes, sauces, salads, gelatines and invalid gruels. Its nutritional theories belong to its day and should be read as history, but the recipes are plain and usable.
